Five Farms Cheesecake

Ingredients

Crust

  • 20 | Chocolate Sandwich Cookies
  • 5 Tbsp. | Butter (Melted)

Irish Cream Filling

  • 2 | 8oz Bricks of Cream Cheese (softened to room temp.)
  • 6 Tbsp. | Powdered Sugar 
  • 4-6 Tbsp. | Five Farms Irish Cream Liqueur
  • 1 tsp. | Lemon Juice
  • 1/2 tsp. | Vanilla Extract
  • Pinch of salt

Five Farms Ganache

  • 1 cup | Chocolate Chips
  • 1/2 cup | Heavy Whipping Cream
  • 1-2 Tbsp. | Five Farms Irish Cream Liqueur (room temp.)

Five Farms Whipped Cream

  • 1/2 cup | Heavy Whipping Cream (COLD)
  • 1 tsp. | Powdered Sugar 
  • 1-2 Tbsp. | Five Farms Irish Cream Liqueur

How to Make

Crust

  1. Place chocolate sandwich cookies in a food processor and pulse them into fine crumbs.
  2. Add melted butter into crumbs and mix until combined. 
  3. Press the crumbs into a 6-inch springform pan lined with a parchment circle.
  4. Refrigerate for at least 20 minutes while you prepare the filling.

Irish Cream Filling

  1. Place these ingredients in a stand mixer fitted with the paddle attachment and beat until light and fluffy. 
  2. In another (clean, dry) bowl, whip 1 Cup of Heavy Whipping Cream and 1 tsp. powdered sugar until stiff peaks form. 
  3. Gently fold the whipped cream into the cream cheese mixture so as not to deflate the mixture. 
  4. Transfer the filling to your prepared crust, cover the top with plastic wrap, and refrigerate for at least 8 hours. (The chilling period is not optional. You can speed it up by placing it in the freezer for 4 hours instead.)
  5. The best recommendation is to refrigerate for 8 hours and freeze for 1 so that it easily releases from the springform pan.

Five Farms Ganache

  1. Place the chocolate chips in a heatproof bowl. 
  2. Boil the heavy cream in the microwave or over the stovetop.
  3. Pour the heavy cream over the chocolate chips and let rest for 1 minute, then stir to combine and melt the chocolate. (If your chocolate is not entirely melted after stirring for 2 minutes, place it in the microwave for 10 seconds.)
  4. Whisk in Five Farms Irish Cream Liqueur to taste.
  5. Allow cooling before adding to cheesecake.
  6. Spread or pipe onto your chilled cheesecake then place into the fridge to set, about 15-20 minutes.

Five Farms Whipped Cream

  1. Combine all ingredients and mix on high speed with a hand or stand mixer until stiff peaks form.
  2. Pipe onto ganache-topped cheesecake and garnish however you’d like.
  3. Keep chilled until serving. (Can also be frozen.)
