Mint Irish Cream Brownies

Ingredients

Brownies

  • 12 Tbsp. | Butter (Melted)
  • 1/3 cup | Five Farms Irish Cream Liqueur
  • 250g | Semi-Sweet Chocolate Chips
  • 1 cup | Sugar
  • 2 | Eggs
  • 2 tsp. | Vanilla Extract
  • ¾ cup | All-purpose Flour
  • ¼ cup | Cocoa Powder
  • 1 tsp. | Salt

Irish Butter Cream

  • 3 Tbsp. | Five Farms Irish Cream Liqueur
  • 2 cups | Mint Chocolate Sandwich Cookies
  • 1/2 cup | Butter
  • 3 cups | Powdered Sugar
  • 1/2 tsp. | Mint Extract
  • Green Food Color Gel

How to Make

  1. Preheat the oven to 350°F (180°C). Line a square baking pan with parchment paper.
  2. Melt half of the chocolate with Five Farms Irish Cream Liqueur in the microwave in 20-second intervals, saving the other half for later.
  3. In a large bowl, mix the butter and sugar with an electric hand mixer, then beat in the eggs and vanilla for 1-2 minutes, until the mixture becomes fluffy and light in color.
  4. Whisk in the melted chocolate, then sift in the flour, cocoa powder, and salt.
  5. Fold to incorporate the dry ingredients.
  6. Then fold in the other half chocolate chips, then transfer the batter to the prepared baking dish.
  7. Bake for 20-25 minutes, and cool completely.
  8. Make the buttercream by combining butter, powdered sugar, Five Farms Irish Cream Liqueur, green food color gel, and mint extract.
  9. Chop mint chocolate sandwich cookies into large chunks.
  10. Add half to the butter cream and fold well.
  11. Add the other half on top of the brownies for decorations.
